I love blue cheese and especially in this recipe. In Panama, things like bottled blue dressing are very expensive and not nearly as good as home-made. I went searching for a recipe on Epicurious.com and found a good base recipe but I changed it to spicy I like it much better. So I call it my own. You can use it as a dressing or a dip and just add less milk.
Spicy Blue Cheese Dressing
1 1/2 cups mayonnaise
2 Tbsp fresh lemon juice
1 Tbsp fresh ground black pepper
1 cup blue cheese crumbled
1 small chipotle chili smashed into a paste
Milk for thinning
Blend all of the above. I use more pepper because I like it that way, but taste along the way. When it comes to the chili start with 1/2 of a chili then add more to taste. I like to use a large chili but when I am serving guests I will use a small chili because some people are more sensitive. Sometimes you can get a hotter than expected chili so again taste along the way. This is going to come out very thick so use milk to thin it to your liking. Let it chill at least an hour before serving.
